Everything but the Kitchen Sink Salad

I’ve been on a real salad kick lately and wanted to share this beautiful lunch I had recently. In my opinion, the darker the greens and the more colorful the salad, the better it is.

Ingredients:

  • Spinach and arugula
  • Shredded cabbage
  • Chopped carrots
  • Diced boiled egg
  • Shredded chicken
  • Chopped red onions
  • Sliced strawberries
  • Sliced cucumber
  • Walnuts
  • Salt and pepper
  • I topped it with Newman’s Own raspberry walnut dressing, aka my favorite store-bought salad dressing. It goes amazing with every salad I’ve made, without being too sweet. (I hate super sugary salads!)
  • I hope when classes start back in the fall I’ll still take the time to make my salads as beautiful as this one!
